As a foodie, I was well aware of the lore of Noma, the epitome of pretentious high fare dining the Danish capital. (If you watch The Bear, you’ll hear a lot about it there, too.) But elevated dining experiences in the city don’t stop there. Down an unassuming alley is Vækst, yet another Michelin starred restaurant in Copenhagen.

After an extensive walking tour of the city, we arrived at the restaurant, eager to try their 4 course menu. As I’m recalling this experience from last summer, I remember going with the fish option. I tried a non-alcoholic beer, tasted the most perfectly cooked fish of my life, was surprised by a Pamela Anderson spotting, and enjoyed the mellow wood and décor. And let’s not forget the extra surprise morsels brought to our table, bringing our menu closer to a true 6 courses.

Today I learned that Vækst translates to growth. The restaurant interprets that into the many plants in their indoor greenhouse and the variety of local vegetables included in their menu. Well, I can say that my appreciation for the food and flavors of simple, well executed cuisine also grew whilst I dined there.

The ambience, flavors, and atmosphere of places like Vækst make Copenhagen a food lover’s dream. If/when I return to Copenhagen, I will have to return to this restaurant to see how the menu has evolved with the seasons.
